At Speirs Brasserie, we serve scratch-made, nose-to-tail dishes crafted with care. From house-made pasta and our in-house smokery to the best locally sourced meats, cheeses and seasonal produce, each plate is honest, refined and full of flavour — think handmade pasta, fresh salads and beautifully cooked steaks.
The restaurant is the vision of head chef Shaun Gray, who brings his international experience back to the quiet hills of Himeville. Working with a small, proudly local team, Shaun focuses on thoughtful cooking, minimal waste and extracting flavour from every part of the produce.
Housed in the historic Old Priory House, Speirs Brasserie blends old-world charm with relaxed elegance — whether you’re enjoying a Sunday roast by the fire or an intimate meal in our private dining room.
